Ingredients:

  • 200g of all-purpose flour
  • 200g of granulated sugar
  • 150ml of vegetable oil
  • 3 large eggs
  • 300g of grated carrots
  • 100g of crushed walnuts
  • 1 tsp of baking powder
  • 1 tsp of baking soda
  • 1 tsp of ground cinnamon
  • 1/2 tsp of salt
  • 100g of cream cheese
  • 50g of confectioners' sugar for frosting

Kitchen Tools Needed:

  • baking pan
  • grater
  • oven

Instructions:

  • Preheat the oven to 180°C (350°F).
  • In a mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, whisk the eggs and sugar until pale and creamy; then slowly add in the vegetable oil while continuing to whisk until fully combined.
  • Fold in the grated carrots and crushed walnuts to the egg mixture.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined without overmixing.
  • Pour the batter into a greased and floured baking pan and smooth the top evenly.
  • Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • While the cake is baking, prepare the frosting by mixing the cream cheese and confectioners' sugar until smooth.
  • Once the cake is cooled, spread the cream cheese frosting evenly on top.
