 Wholesome Mushroom Barley Soup

Ingredients:

  • 200g of pearl barley
  • 500ml of vegetable broth
  • 300g of fresh mushrooms, sliced
  • 100g of carrots, diced
  • 100g of celery, diced
  • 100g of onion, chopped
  • 3 cloves of garlic, minced
  • 2 tbsp of olive oil
  • 1 tsp of dried thyme
  • 1 tsp of salt
  • 0.5 tsp of black pepper
  • 120ml of heavy cream
  • Fresh parsley for garnish

Kitchen Tools Needed:

  • Large pot
  • Cutting board
  • Chef's knife
  • Wooden spoon
  • Ladle

Instructions:

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onions, diced carrots, and celery. Sauté for about 5 minutes until softened.
  • Stir in the minced garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms are tender.
  • Add the pearl barley, vegetable broth, dried thyme, salt, and black pepper. Bring the mixture to a boil.
  • Reduce the heat and let it simmer for about 15 minutes until the barley is cooked and has absorbed some of the broth.
  • Stir in the heavy cream and let it heat through for about 2 minutes.
  • Taste and adjust seasoning if needed, then remove from heat.
  • Serve hot, garnished with fresh parsley.
