Ingredients:

  • 4 servings of fresh ramen noodles
  • 1 tablespoon of vegetable oil
  • 1 onion, sliced
  • 4 cloves of garlic, minced
  • 1 tablespoon of ginger, grated
  • 4 cups of vegetable broth
  • 3 tablespoons of miso paste
  • 2 tablespoons of soy sauce
  • 1 tablespoon of chili paste
  • 1 cup of sliced shiitake mushrooms
  • 1 cup of baby spinach
  • 4 soft-boiled eggs, halved
  • 2 green onions, sliced
  • Sesame seeds for garnish

Kitchen Tools Needed:

  • Large pot
  • Strainer
  • Medium saucepan
  • Chopsticks
  • Soup ladle

Instructions:

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the sliced onion, minced garlic, and grated ginger, sauté until fragrant, about 3 minutes.
  • Pour in the vegetable broth and bring to a simmer.
  • Stir in the miso paste, soy sauce, and chili paste, mixing until well combined.
  • Add the sliced shiitake mushrooms and cook for another 2-3 minutes until tender.
  • Meanwhile, cook the fresh ramen noodles according to package instructions, then drain and set aside.
  • In each serving bowl, place a portion of ramen noodles, pour the hot miso broth over them, and top with baby spinach, soft-boiled eggs, and green onions.
  • Sprinkle sesame seeds on top as a garnish before serving.
