Ingredients:
- 4 servings of fresh ramen noodles
- 1 tablespoon of vegetable oil
- 1 onion, sliced
- 4 cloves of garlic, minced
- 1 tablespoon of ginger, grated
- 4 cups of vegetable broth
- 3 tablespoons of miso paste
- 2 tablespoons of soy sauce
- 1 tablespoon of chili paste
- 1 cup of sliced shiitake mushrooms
- 1 cup of baby spinach
- 4 soft-boiled eggs, halved
- 2 green onions, sliced
- Sesame seeds for garnish
Kitchen Tools Needed:
- Large pot
- Strainer
- Medium saucepan
- Chopsticks
- Soup ladle
Instructions:
- Heat the vegetable oil in a large pot over medium heat.
- Add the sliced onion, minced garlic, and grated ginger, sauté until fragrant, about 3 minutes.
- Pour in the vegetable broth and bring to a simmer.
- Stir in the miso paste, soy sauce, and chili paste, mixing until well combined.
- Add the sliced shiitake mushrooms and cook for another 2-3 minutes until tender.
- Meanwhile, cook the fresh ramen noodles according to package instructions, then drain and set aside.
- In each serving bowl, place a portion of ramen noodles, pour the hot miso broth over them, and top with baby spinach, soft-boiled eggs, and green onions.
- Sprinkle sesame seeds on top as a garnish before serving.
