 Spiced Lamb Kebab Skewers with Mint Yogurt Sauce

Ingredients:

  • 1.5 kg of lamb shoulder, trimmed and cut into cubes
  • 2 tbsp of ground cumin
  • 2 tbsp of ground coriander
  • 1 tsp of smoked paprika
  • 1 tsp of cayenne pepper
  • 4 cloves of garlic, minced
  • 1 onion, grated
  • 1/4 cup of fresh parsley, chopped
  • Salt and black pepper to taste
  • 1 cup of plain Greek yogurt
  • 1/4 cup of fresh mint, chopped
  • Juice of 1 lemon
  • 6 pita breads, for serving
  • Optional: fresh vegetables for serving

Kitchen Tools Needed:

  • Mixing Bowl
  • Skewers
  • Measuring Spoons

Instructions:

  • In a large mixing bowl, combine the lamb cubes with cumin, coriander, paprika, cayenne pepper, garlic, grated onion, parsley, salt, and pepper. Mix well until the lamb is evenly coated with the spices.
  • Cover the bowl and let it marinate for at least 15 minutes to allow the flavors to develop.
  • While the lamb is marinating, prepare the mint yogurt sauce by combining Greek yogurt, chopped mint, lemon juice, and a pinch of salt in a separate mixing bowl. Mix well and set aside.
  • Preheat the grill to medium-high heat. Thread the marinated lamb cubes onto skewers, leaving a little space between each piece to ensure even cooking.
  • Place the skewers on the hot grill and cook for about 10-12 minutes, turning occasionally, until the lamb is well browned and reaches desired doneness.
  • Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
  • Serve the kebabs with pita bread and a generous dollop of mint yogurt sauce, along with fresh vegetables if desired.
