Ingredients:
- 200g of cornmeal
- 100g of all-purpose flour
- 50g of sugar
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda
- 5g of salt
- 250ml of buttermilk
- 1 large egg
- 100g of melted butter
- 30g of chopped fresh herbs (such as thyme and rosemary)

Instructions:
- Preheat the oven to 220°C (425°F).
- In a mixing bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, mix the buttermilk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should remain somewhat lumpy.
- Fold in the chopped herbs gently into the batter.
- Grease the baking pan with butter or line it with parchment paper, then pour in the batter evenly.
- Bake for about 15-20 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
- Allow the cornbread to cool slightly before cutting into squares and serving.
