Ingredients:
- 300g of Arborio rice
- 1L of fish stock
- 300g of mixed seafood (shrimp, mussels, calamari)
- 1 red bell pepper, diced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp of smoked paprika
- 2 tbsp of olive oil
- 1 handful of fresh parsley, chopped
- Salt to taste
- Black pepper to taste
- 1 lemon, cut into wedges for serving
Kitchen Tools Needed:
- Large frying pan
- Wooden spoon
- Ladle
- Measuring cups
- Sharp knife
- Chopping board
Instructions:
- Heat olive oil in a large frying pan over medium heat.
- Add chopped onion and garlic, sauté until softened.
- Stir in the diced red bell pepper and cook for another 2 minutes.
- Add the Arborio rice and smoked paprika, stirring well to coat the rice in the oil and vegetables.
- Pour in the fish stock and bring to a simmer.
- Season with salt and black pepper, then reduce heat and let it simmer for about 10 minutes without stirring.
- Add the mixed seafood and gently fold it into the rice, allowing it to cook for another 5 minutes until the seafood is cooked through and the rice is tender.
- Remove from heat and let it sit for a few minutes.
- Garnish with fresh parsley and serve hot with lemon wedges on the side.
