Ingredients:

  • 300g of Arborio rice
  • 1L of fish stock
  • 300g of mixed seafood (shrimp, mussels, calamari)
  • 1 red bell pepper, diced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp of smoked paprika
  • 2 tbsp of olive oil
  • 1 handful of fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste
  • 1 lemon, cut into wedges for serving

Kitchen Tools Needed:

  • Large frying pan
  • Wooden spoon
  • Ladle
  • Measuring cups
  • Sharp knife
  • Chopping board

Instructions:

  • Heat olive oil in a large frying pan over medium heat.
  • Add chopped onion and garlic, sauté until softened.
  • Stir in the diced red bell pepper and cook for another 2 minutes.
  • Add the Arborio rice and smoked paprika, stirring well to coat the rice in the oil and vegetables.
  • Pour in the fish stock and bring to a simmer.
  • Season with salt and black pepper, then reduce heat and let it simmer for about 10 minutes without stirring.
  • Add the mixed seafood and gently fold it into the rice, allowing it to cook for another 5 minutes until the seafood is cooked through and the rice is tender.
  • Remove from heat and let it sit for a few minutes.
  • Garnish with fresh parsley and serve hot with lemon wedges on the side.
