Ingredients:

  • 500g of basmati rice
  • 700g of chicken, cut into pieces
  • 250g of plain yogurt
  • 3 medium onions, finely sliced
  • 4 cloves of garlic, minced
  • 1 inch ginger, grated
  • 2-3 green chilies, slit
  • 5-6 whole cloves
  • 3-4 green cardamom
  • 1 stick of cinnamon
  • Salt to taste
  • 4 tablespoons of ghee or vegetable oil
  • Fresh coriander leaves, chopped for garnish
  • Fresh mint leaves, chopped for garnish
  • 300ml of chicken broth
  • 1 teaspoon of saffron soaked in 50ml milk

Kitchen Tools Needed:

  • Large pot
  • Frying pan
  • Wooden spoon
  • Lid
  • Measuring cups

Instructions:

  • In a large pot, heat ghee or oil over medium heat. Add sliced onions and sauté until golden brown.
  • Add the minced garlic, grated ginger, and slit green chilies; cook for another minute until fragrant.
  • Stir in the chicken pieces; cook until they are browned on all sides.
  • Mix in the yogurt, salt, cloves, cinnamon, and cardamom; cover and cook for about 5 minutes until the chicken is tender.
  • Meanwhile, rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
  • Add the soaked rice to the pot with the chicken; stir carefully to combine everything.
  • Pour in the chicken broth and bring to a boil; cover with a lid, reduce heat to low, and simmer for 10-12 minutes or until rice is cooked and liquid is absorbed.
  • Once done, remove from heat and let it sit covered for another 5 minutes before fluffing it up with a fork.
  • Garnish with freshly chopped coriander and mint leaves, and drizzle saffron milk over the top before serving.
