Ingredients:
- 500g of basmati rice
- 700g of chicken, cut into pieces
- 250g of plain yogurt
- 3 medium onions, finely sliced
- 4 cloves of garlic, minced
- 1 inch ginger, grated
- 2-3 green chilies, slit
- 5-6 whole cloves
- 3-4 green cardamom
- 1 stick of cinnamon
- Salt to taste
- 4 tablespoons of ghee or vegetable oil
- Fresh coriander leaves, chopped for garnish
- Fresh mint leaves, chopped for garnish
- 300ml of chicken broth
- 1 teaspoon of saffron soaked in 50ml milk
Kitchen Tools Needed:
- Large pot
- Frying pan
- Wooden spoon
- Lid
- Measuring cups
Instructions:
- In a large pot, heat ghee or oil over medium heat. Add sliced onions and sauté until golden brown.
- Add the minced garlic, grated ginger, and slit green chilies; cook for another minute until fragrant.
- Stir in the chicken pieces; cook until they are browned on all sides.
- Mix in the yogurt, salt, cloves, cinnamon, and cardamom; cover and cook for about 5 minutes until the chicken is tender.
- Meanwhile, rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
- Add the soaked rice to the pot with the chicken; stir carefully to combine everything.
- Pour in the chicken broth and bring to a boil; cover with a lid, reduce heat to low, and simmer for 10-12 minutes or until rice is cooked and liquid is absorbed.
- Once done, remove from heat and let it sit covered for another 5 minutes before fluffing it up with a fork.
- Garnish with freshly chopped coriander and mint leaves, and drizzle saffron milk over the top before serving.
