Ingredients:
- 2 cups of heavy cream
- 1 cup of whole milk
- 3/4 cup of granulated sugar
- 1 tablespoon of pure vanilla extract
- 1/2 cup of roasted almonds, chopped
- 1/2 cup of egg yolks (about 4 large yolks)

Instructions:
- In a mixing bowl, whisk together the heavy cream, whole milk, and granulated sugar until the sugar is dissolved.
- Add the egg yolks to the mixture and whisk until well combined.
- Stir in the pure vanilla extract, mixing thoroughly.
- Transfer the mixture to a saucepan and heat over medium heat, stirring constantly until the mixture thickens slightly and coats the back of a spoon, about 8-10 minutes.
- Remove from heat and let the mixture cool for about 15 minutes. Then pour it into an ice cream maker and churn according to the manufacturer's instructions.
- Once churned, fold in the chopped roasted almonds evenly throughout the ice cream mixture.
- Transfer the ice cream to a freezer-proof container and freeze for at least 2-4 hours until firm.
