Ingredients:

  • 200g of all-purpose flour
  • 100g of sugar
  • 80g of unsalted butter
  • 2 large eggs
  • 120ml of whole milk
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of baking powder
  • 200g of mixed berries (blueberries, raspberries, strawberries)
  • 1 pinch of salt

  • Mixing bowls
  • Whisk

  • Oven

Instructions:

  • Preheat the oven to 190°C (375°F) and grease the muffin tin.
  • In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, beat the butter until creamy, then add in the eggs one at a time, mixing well after each addition.
  • Stir in the milk and vanilla extract until combined.
  • Gradually fold in the dry ingredients into the wet mixture until just combined; do not overmix.
  • Gently fold in the mixed berries, ensuring even distribution in the batter.
  • Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let muffins cool in the tin for a few minutes before transferring to a wire rack.
