Ingredients:

  • 500g of mixed vegetables (bell peppers, zucchini, carrots)
  • 200g of unsalted butter
  • 5 cloves of garlic, minced
  • 20g of fresh parsley, chopped
  • 5g of fresh thyme leaves
  • 5g of fresh rosemary, chopped
  • Salt to taste
  • Pepper to taste

Kitchen Tools Needed:

  • Baking tray
  • Mixing bowl
  • Oven
  • Knife
  • Cutting board

Instructions:

  • Preheat your oven to 200°C (400°F).
  • In a mixing bowl, melt the unsalted butter and mix in the minced garlic, chopped parsley, thyme, and rosemary.
  • Chop the mixed vegetables into bite-sized pieces and place them in a baking tray.
  • Pour the garlic herb butter over the vegetables and toss until they are well coated.
  • Season with salt and pepper according to your taste.
  • Spread the vegetables evenly on the baking tray and roast in the preheated oven for about 25 minutes, or until they are tender and golden brown, stirring halfway through. Serve hot.
