Ingredients:
- 500g of fresh white fish fillets (such as tilapia or snapper)
- 150ml of freshly squeezed lime juice
- 1 medium red onion, finely sliced
- 1-2 jalapeño peppers, finely chopped
- 200g of cherry tomatoes, halved
- 1/2 cup of fresh cilantro, chopped
- Salt to taste
- Black pepper to taste
- 2 ripe avocados, diced

- Lime Juicer
Instructions:
- Start by cutting the fish fillets into small, uniform cubes and place them in a mixing bowl.
- Pour the lime juice over the fish, ensuring it is fully submerged. Cover and refrigerate for about 15 minutes to 'cook' the fish in the citrus.
- While the fish is marinating, thinly slice the red onion and chop the jalapeño peppers, adding them to the mixing bowl after the fish has marinated.
- Add the halved cherry tomatoes and chopped cilantro to the bowl, gently folding all the ingredients together.
- Season the mixture with salt and black pepper to taste and mix well.
- Before serving, gently fold in the diced avocados to add creaminess. Be careful not to mash them too much.
- Transfer the ceviche to a serving platter and enjoy immediately with tortilla chips or alone.
