Ingredients:
- 150g of almond flour
- 100g of powdered sugar
- 2 large egg whites
- 50g of melted butter
- 1 teaspoon of vanilla extract
- a pinch of salt

Instructions:
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, whisk together the almond flour, powdered sugar, and a pinch of salt.
- In a separate bowl, whisk the egg whites until soft peaks form. Gently fold the egg whites into the dry ingredients until just combined.
- Add the melted butter and vanilla extract to the mixture, folding gently until the batter is smooth.
- Sift the mixture over itself to ensure lightness and fold it gently.
- Line a baking tray with parchment paper and spoon dollops of the batter onto the tray, leaving space between each biscuit.
- Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown.
- Remove from the oven and let them cool on the baking tray for a few minutes before transferring to a wire rack to cool completely.
