Ingredients:
- 200g of all-purpose flour
- 100g of cold unsalted butter
- 50g of granulated sugar
- 1 large egg
- 1 pinch of salt
- 200g of assorted fresh fruits (such as blueberries, strawberries, and apples)
- 100g of cream cheese
- 50g of powdered sugar
- 1 teaspoon of vanilla extract
- 1 egg yolk (for egg wash)
Kitchen Tools Needed:
- Oven
- Rolling Pin
- Baking Sheet
- Mixing Bowl
- Parchment Paper
- Pastry Brush
Instructions:
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the flour, cold butter cut into small pieces, granulated sugar, and a pinch of salt. Use a pastry cutter or your fingers to mix until it resembles coarse crumbs.
- Add the large egg to the mixture and quickly combine until a dough forms. Avoid overworking the dough, then wrap it in plastic wrap and chill in the refrigerator for 10 minutes.
- Meanwhile, prepare the filling by mixing cream cheese with powdered sugar and vanilla extract until smooth. Set aside.
- Roll out the chilled pastry dough on a floured surface to about 5mm thick. Cut into squares or circles, roughly 10cm in size.
- Place a spoonful of the cream cheese mixture in the center of each pastry piece, then add a few pieces of assorted fresh fruit on top.
- Fold the edges of the pastry over the filling to create a sealed pocket and place on the prepared baking sheet.
- Brush the tops with the egg yolk to give them a golden color when baked.
- Bake in the preheated oven for 15-18 minutes or until golden brown and flaky.
