Ingredients:

  • 200g of dark chocolate (70% cocoa)
  • 100g of unsalted butter
  • 150g of granulated sugar
  • 3 large eggs
  • 1 teaspoon of vanilla extract
  • 50g of all-purpose flour
  • Pinch of salt

Instructions:

  • Preheat the oven to 200°C (392°F).
  • Grease the cake molds with butter and dust with flour to prevent sticking.
  • In a mixing bowl, melt the dark chocolate and butter together over a double boiler until smooth, stirring occasionally.
  • In another bowl, whisk together the sugar, eggs, and vanilla extract until pale and fluffy.
  • Gently fold the melted chocolate mixture into the egg mixture.
  • Sift in the flour and salt, and carefully fold until just combined, being cautious not to overmix.
  • Pour the batter into the prepared cake molds, filling them about 3/4 full.
  • Bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft.
  • Remove from the oven and let cool for 1 minute, then invert the cakes onto plates.
  • Serve immediately, ideally with a scoop of vanilla ice cream or a dusting of powdered sugar.
